The Nagahama Ichiban Ramen-ya in Fukuoka Japan, was the original shop that two life-long friends apprenticed together to learn the trade secrets of making authentic Tonkotsu (pork-based) ramen.
30 years later, Founders Kawahara-san of Ippudo, and Kido-san of Najima-tei, reunite side by side at the Yokohama Ramen museum, representing their style of Tonkotsu ramen.
To commemorate their reunion, Ippudo NY will offer on Wednesday, February 18th 2015, Najima-tei’s Authentic Nagahama-style Tonkotsu ramen.
The main characteristic of Nagahama-style tonkotsu is the lighter soup, but a richer, porky taste. Noodles are thin and hard.
